Chocolate Mousse … Breakfast in Bed?
Low in sugar, and rich in healthy fats, this mousse is ready in minutes. If you are short on time, it’s perfect for breakfast in bed this Mother’s Day
Good Morning. And Happy Mother’s Day. I thought I’d send a quickie mailer out this morning with a fool-proof chocolate mousse recipe (foolproof being the key-word here, but you can also describe it as low-sugar, paleo-friendly, dairy-free or low-carb…. It’s honestly the jack-of-all-trades for a dessert or breakfast mock-up.. )
Mother’s Day isn’t always easy.
I found this day terribly uncomfortable and awkward when I was a child (blended families.. it was hard), but I enjoy it a lot now; my kids make a fuss, and there’s usually a breakfast in bed that’s pretty special and full of good thoughts and love.
I’m hoping that this chocolate mousse recipe might make today just that little-bit-easier and enjoyable for some ...... I served it last week with slivers of tinned peach slices, black coffee and fruit salad on the side. It was the best brunch we’ve had in a long time, and dead-easy to throw together last minute.
What You Will Need-
Start with good quality chocolate (think low-sugar, and additive free). I like shopping local, as Melbourne has recently become a mecca for artisanal chocolate blends that are free from refined sugar, and often dairy and soy free. With good chocolate, you don’t need cream or sugar. Just add cold-pressed coconut oil, plus fresh eggs that you can serve raw (check they are free range or pasture-raised)...
If you aren’t serving mousse, but need some other Mother’s Day ideas, please have a think on gluten-free, sprouted buckwheat pancakes, or a chocolate cake with extra oomph. I’m always a fan of rich, low-sugar, ice-cream which you can serve with black coffee, so I wouldn’t go past this lamington ice-cream cake that’s perfect for brunch or afternoon tea.
In any case, please enjoy yourself today. I know it isn’t always easy, and mother’s come in all forms - it might be your neighbour, or a friend that you are celebrating. I’m always grateful for the women in my life - my mum and the friends and sitters that have kept our family strong, and I’ll be wishing them good thoughts and easy cooking for the day ahead.
Recipe: Three-ingredient Chocolate Mousse-
What You Will Need:
200g dark chocolate
7 pasture-raised eggs
1 tablespoon coconut oil.
How to Make a Mousse-
Break up the chocolate into small pieces and place in a small bowl or jug that you an fit snugly in a medium-sized saucepan. Fill the saucepan with two inches of water and place over a low heat. Add the coconut oil in with the chocolate and stir with a wooden spoon. Set aside to gently melt while you prepare the eggs.
Separate the eggs by placing the whites in a large mixing bowl and the yolks in a small side dish. Whisk the whites until stiff peaks form and set aside.
Keep checking and stirring the chocolate. Once melted, add in the yolks and mix until well combined.
Pour the chocolate mixture in with the egg whites and gently whisk until well combined. Pour into serving dishes and refrigerate immediately. Serve with fresh berries or tinned peaches. It’s also delicious dunked into a fresh mug of coffee.
